Mushroom, Spinach and Egg Brunch

I was so hungry with a morning filled with work and chores – and I kept promising myself I’d eat soon …. after the next chore ….. so by the time 2pm arrived I was RAVENOUS!
This late brunch was the result of a fridge raid, but it’s one I’m going to repeat again and again because it was delicious.

Mushroom, Spinach and Egg Brunch

So, for one person, I panfried 2 large field mushrooms in butter, steamed a handful of fresh spinach leaves, sliced half an avocado, grated a small amount of parmesan cheese, topped it with an egg which I fried next to the mushrooms just before serving up and drizzled my favourite balsamic vinegar and a few fresh coriander leaves over it all.  Adding lots of black pepper to finish.

To layer it up:
1. Mushrooms
2. Spinach
3. Avocado
4. Egg
5. Parmesan
6. Coriander leaves
7. Balsamic vinegar
8. Black pepper
Give it a try. It only took approx 10 minutes to put together and was tasty, refreshing and filling.
