Since I’ve been adding more strength training to my workouts, boy am I hungry!  And apparently, according to science, if we eat protein in the morning, it helps to curb our cravings for longer.  What’s more, this power omelette is packed full of healthy nutrition and is super easy to prepare.

I ate this power omelette for breakfast this morning and now feel CRAZY STRONG LIKE A GIRL! ♥

Power Omelette

Serves 1 as breakfast

A knob of butter

2 eggs, beaten

3 cherry tomatoes, halved

Half a green pepper, diced

1 red onion, diced

1 large field mushroom, chopped

Pinch chilli flakes1 tbsp fresh coriander

Small handful parmesan cheese, grated

Oodles of black pepper and pinch of sea salt

Mung beans roasted vegetables

How to prepare Power Omelette

Melt the butter in a frying pan, add all the vegetables and fry on a gentle heat for approx 10 minutes.  Next add the coriander and chilli flakes (if you don’t like coriander, substitute with fresh parsley or chives). Tip the beaten eggs on top of the vegetables and swirl around a little to create a base with the vegetables.  

Scatter the cheese on top, replace the lid and cook on a low heat for about 5 minutes.

Add a pinch of salt and black pepper and serve up!
