Smoked salmon with creamy citrus pasta

Smoked salmon with creamy citrus pasta is a refreshing yet comforting meal combining the smokiness of the salmon with the softness of creme fraiche, avocado and pasta and the zing of lemon, horseradish and chives.  It pulls together to create an easy to prepare, delicious and healthy meal.

It will have your tastebuds jumping for joy.  Smoked salmon with creamy citrus pasta is nutritious and satisfying on the stomach. It has a refined flavour which would impress any dinner party guests.  You could make this in smaller portions and serve as a delectable starter.

Serves 4

400g ethically sourced smoked salmon

Juice of ½ lemon

150 ml creme fraiche

3cm freshly grated horseradish (or tsp horseradish sauce)

Small bunch of fresh chives, chopped

4 handfuls fresh spinach leaves

2 large avocados

1 tbsp olive oil

Serve with pasta of your choice

How to prepare smoked salmon with creamy citrus pasta

Bring a pan of water to the boil and cook the pasta as per the packet instructions.

While the pasta is cooking, wash and drain the spinach.

In a bowl, add the creme fraiche, lemon juice, horseradish and chopped chives. Combine gently.

When the pasta is cooked, drain it and sprinkle a little olive oil on it and flake the smoked salmon into it.  I tend to pull the smoked salmon apart with my fingers and add it to the pan.  Add the spinach and the creme fraiche mixture and combine.

Share between 4 plates and scatter the chopped avocado on top.

Add salt and pepper to taste.
